Northern and Eastern European Cuisines

German cuisine displays strong regional identity built around meat preservation and grain-based staples suited to a temperate climate: an enormous variety of sausages, from Bavarian weisswurst to the currywurst popularized in post-war Berlin, alongside dense breads, potatoes, and cabbage preparations such as sauerkraut. German beer culture is anchored by the Reinheitsgebot, a purity law first issued in Bavaria in 1516 restricting beer ingredients to water, barley, and hops (yeast’s role was not yet scientifically understood), which, while its modern application has been relaxed and reinterpreted over the centuries, remains a touchstone of German brewing identity and a widely cited, if only partly accurate, symbol of quality and tradition.
