Packaging and Foodborne Illness

Modern food packaging does far more than contain a product: it is engineered to act as a barrier against oxygen, moisture, and light, the three factors most responsible for spoilage and nutrient loss. Multilayer plastic films and foil laminates combine materials chosen for specific barrier properties, vacuum packaging physically removes the oxygen that supports both microbial growth and oxidative rancidity, and "active packaging" technologies, such as oxygen-scavenging sachets or antimicrobial films, go further by actively neutralizing threats to shelf life rather than simply excluding them.
